Let’s Celebrate Matariki with Star Shortbread Biscuits (Pihikete Potopoto)

Matariki, an opportunity for our children to be creative and learn what Matariki is all about.

Ingredients
150g butter, softened
½ cup icing sugar, 
½ cup cornflour, 
½ tsp cinnamon
1 cup plain flour, 
White chocolate, melted
Sprinkles to decorate
METHOD: -
Preheat the oven to 160°C fan bake. 
Cut the butter into cubes and using a mixer, add butter to the bowl and start mixing, add the icing sugar and beat for a few mins until pale and fluffy. 
Sift in the cornflour, cinnamon, and flour. Mix on low until it forms a fine crumb. Press the dough into a ball and place on a bench and knead a few times. 
Roll the dough out to a 1cm thickness. Using a star shaped cookie cutter, cut into star shapes. 
Place on a lined baking tray and bake for 15 mins just starting to brown on the edges, but still soft. 
When the shortbread has cooled, dip each one in the melted chocolate and spoon over the sprinkles. 
When the chocolate has firmed up, serve as a Matariki treat!!
