Ingredients:
4 cups apples, peeled and chopped
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup butter, softened
1 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup chopped nuts (optional)
METHOD:
Preheat oven to 175°C.
Grease and flour a 9x13 inch (23x33cm) baking tin.
In a bowl, mix flour, baking soda, salt, cinnamon, and nutmeg.
In another bowl, cream together the butter and sugar until light and fluffy and beat in the eggs and vanilla.
Gradually add the dry ingredients to the wet mixture.
Fold in the apples and nuts.
Pour the mixture into the prepared tin and bake for 45-50 mins, or until a cake skewer inserted into the center comes out clean.
Serve with fresh whipped cream and a cup of tea.
