Banana Pancakes

Ingredients:
1 cup all-purpose flour
1 Tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
Substitute for Buttermilk (White Vinegar, Milk - 1 Tbsp white vinegar & enough milk to make 1 cup)
1 large egg
2 Tablespoon melted butter
1 ripe banana, mashed
Butter or oil for cooking
METHOD:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the mashed banana.
Heat a non-stick pan over medium heat and lightly grease with butter or oil.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Serve with your favorite toppings, such as maple syrup, fresh fruit, or yogurt.
