
Ingredients:
2 cups flour
1/4 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1/2 cup cold butter, cubed
1/2 cup dried cranberries
Zest of 1 orange
2/3 cup milk
1 egg
1 tsp vanilla extract
METHOD:
Preheat your oven to 220°C. Grease and line a baking tray with baking paper.
In a bowl, mix flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs
Stir in the dried cranberries and orange zest.
In another bowl, whisk together the milk, egg, and vanilla. Add to the dry ingredients and stir until just combined.
Turn the dough out onto a floured surface and knead gently. Pat into a circle about 1 inch thick and cut into wedges.
Place the wedges on the prepared baking tray and bake for 12-15 mins, or until golden brown.
Serve with a bowl of whipped cream and a bowl of your favourite jam.
