Ingredients: -
1 recipe of pie crust
4 cooked and chopped potatoes
1 stick of silver beet or 1 bok-choy
1/2 carton of cream cheese
4 eggs
1 cup cream or milk
Seasoning to taste
1/2 cup grated cheese
METHOD: -
Set oven to 180C.
Roll out and line a flan tin with pastry.
Chop up bok-choy or silver beet into small slivers.
Put into a bowl.
Add cream and 4 eggs and mix in well.
Add teaspoonsful’s of cream cheese in lumps and stir in. Season well
Put in pie crust and top with grated cheese and a sprinkle of paprika.
Bake for approx 40 mins. Check its set in the middle. Add more time if not done.
Leave to cool. Serve slightly warm. 1.5 mins per slice. I put a sweet capsicum sauce with it -
