So Easy Xmas Cake (Submitted by Alme)
Ingredients: -
1kg mixed dried fruit,
400g tin of condensed milk,
¾ cup Baileys Irish cream,
2 cups self-raising flour -
METHOD: -
In a bowl, place all ingredients except the flour, mix well and cover over and place in the fridge overnight.
Next day remove from the fridge and stir well allowing the mixture to come to room temperature.
Preheat oven to 140c, grease and line a deep 20cm round cake tin with baking paper.
Fold in the flour to the other mixture. Pour into the cake tin and smooth the top, bake for 1.5 hours, until a skewer inserted comes out clean.
