Ingredients: -
2-3 pork loin chops,
1 Tbsp clear honey,
Salt & pepper, to taste,
2 apples, cored and cut into wedges,
2 medium kumara, peeled and cut into wedges,
1 Tbsp mustard,
2 Tbsp vegetable oil,
METHOD: -
Preheat oven to 200°C fan bake.
Place the kumara wedges in a large roasting pan and drizzle over 1 Tbsp oil. Season with salt & pepper.
Roast for 10-15 mins, until the wedges are starting to soften.
Mix the remaining oil with the mustard and honey in a bowl. Season the pork then add the apple and pork into the roasting pan, pour the oil, mustard, and honey sauce over the pork. Roast for 15-20 mins or until the pork is cooked.
You can add your favourite steamed vegetables such as broccoli and carrots.
