Pipi Soup – (Hupa Pipi)

Ingredients: -
Pipi’s (As many as you like), Wash thoroughly, to remove sand,
1 - 2 Litres Milk, (Will depend on how many pipis you use)
1 - 2 Cups Mixed vegetables, can be frozen.  If using fresh veges, steam first,
Salt and Pepper, to taste,
1 Beef Oxo cube 
Flour or Cornflour, for thickening,
METHOD: -
Steam open pipis and shell.  Retain the juice from the pipi's and strain into a jug. Pour the juice into a pot, add milk, vegetables, crumbled oxo cube, and simmer for 10-15 minutes.  Add pipis and season to taste. Lastly thicken to the consistency that you like with a little flour & water or cornflour & water.  If you want a bit of richness, you can add some cream.
Serve hot with Rewena bread or fried bread. A nice, simple recipe to celebrate Matariki.
