Made from delicious food from the sea. Enjoy whanau time with a favourite toastie.
Ingredients: -
50g butter, allow extra for toast,
3 Tbsp flour,
2 cups milk,
1 cup of finely sliced parsley,
Approx 500g of smoked fish of your choice, break into bite-size pieces,
Rind & juice of 1- 2 lemons, (Depending on your taste)
1 loaf bread, uncut sourdough or other bread of choice
METHOD: -
Melt the butter in a pot, add flour and some salt and pepper and cook for 1 min, stirring with a whisk.
Add the milk, ½ cup at a time, whisking after each addition. Whisk until the sauce thickens then add the parsley, fish, lemon rind and juice and stir to combine.
Slice bread into thick slices, buttering 1 side of each slice. Make into 6 sandwiches, buttered sides out, with a generous filling of fish in each.
4.Heat a frying pan, then fry the sandwiches gently for 2-3 mins on each side until golden.
Serve hot with kumara fries.
