Food from the sea, mussels, elegantly done in a lemon butter garlic sauce
Ingredients: -
450g mussels in shells (Wash)
2 Tbsp unsalted butter
1 small onion, finely chopped,
2 tsp fresh garlic, crushed,
½ tsp chili flakes,
1 cup fresh cream, whipping cream,
Salt & black pepper, to taste
1 cup dry white wine,
1 lemon, juice & zest
½ cup parsley, chopped
METHOD: -
Melt the Butter in a large pan with a lid, saute onion, garlic and chili flakes, until soft.
Add the white wine and simmer until reduced by two thirds, add the cream and simmer 2–3 mins.
Add the mussels and cover the pan, over low heat, steam the mussels until cooked, approx 8–10 mins.
Remove from heat, season to taste with salt & black pepper, stir through the lemon juice and finely grated zest and parsley.
