Ingredients: -
1½ cups plain flour,
1¼ cups black cocoa powder,
1 teaspoon baking soda,
¼ teaspoon salt,
1 cup unsalted butter, softened,
1 cup sugar,
¾ cup brown sugar,
2 large eggs,
1 cup chocolate chips -
METHOD: -
Preheat oven to 200⁰C and line an oven tray with baking paper.
In a medium bowl, whisk the flour, cocoa, baking soda and salt, and set aside.
In a separate bowl, use an electric beater to cream together the butter and both sugars. Add the eggs one at a time, mixing well after each addition. Add dry ingredients to mixture and then the chocolate chips, making sure it is well combined.
Drop 2 tablespoons of the dough into rounded mounds on the prepared trays and bake for 8 minutes - they should be soft to the touch when done.
Allow to cool for 5 minutes before transferring to a wire rack. -
Makes approximately 36 cookies.
