Ingredients: -
3 egg whites,
1 1/2 cups white sugar,
1 tsp corn flour,
1 tsp malt vinegar,
1 tsp vanilla essence,
4 Tbsp boiling water -
METHOD: -
Put all ingredients into the bowl of an electric mixer and beat for about 10 minutes until thick and glossy.
Turn onto a tinfoil lined baking sheet.
Bake 10 mins at 150 degrees Celsius then turn down to 100 degrees Celsius for 45 minutes.
Cool in oven if possible.
Carefully peel off the tinfoil.
Top with whipped cream and fruit of your choice.
This recipe has never failed and I have made it for many over the years.
This recipe can be successfully doubled with the same cooking time.
It is crisp on the outside with a marshmallow texture in the middle.
Add it to the Xmas table for sure!
