Ingredients: -
600g baby carrots
1 Tbsp honey
1 ½ Tbsp olive oil
Salt & pepper to taste
1 Tbsp butter
1 ½ tsp fresh dill
1 Tbsp fresh parsley
METHOD: -
Preheat the oven to 180°C fan bake. Wash and trim baby carrots, dry well and place on a lined baking tray.
Melt honey in a small glass jug in the microwave then add olive oil. Pour the glaze over the carrots and coat well. Add salt & pepper to taste and toss well.
Roast carrots 20-25 minutes or until tender crisp. Remove from oven, toss with butter, dill and parsley. Season with salt & pepper if needed.
Serve Hot.
