Greek Salad

Ingredients:-
1 large, ripe tomato, cut into wedges
1 cucumber, sliced into chunks
1 green pepper, cut into chunks
1 small red onion, sliced
½ cup olives, with pits
2 Tbsp extra virgin olive oil
1 Tbsp red wine vinegar (optional)
Sea salt (amount will vary, depending on the saltiness of your feta)
Around 1 cup (4 oz) goat’s milk feta cheese, or your own choice, cut into large chunks
½ small green lettuce, break into full leaves
1 tsp dried oregano
METHOD:-
Wash and chop veggies, placing them in a large, shallow bowl.
Placing the lettuce leaves around the sides of the bowl, add olives.
Drizzle with extra virgin olive oil and red wine vinegar. Sprinkle with salt. 
Toss lightly to combine and coat the vegetables with the dressing.
Top the salad with large chunks of feta cheese and sprinkle with dried oregano.
Gently toss and it is ready to serve on it’s own or as a side dish to your favourite meal.
