Ingredients: -
454 grams of salmon fillets (1 inch thick, skin removed)
2 Tbsp soy sauce
1-1/2 Tbsp honey
2 cloves garlic, finely chopped
1-1/2 tsp fresh ginger, finely chopped
Coriander stalks and thin strips of orange pepper for garnish
METHOD: -
Potato Mash: -
2-3 large potatoes
Fresh chives, finely chopped
Peel, wash, and cut down potatoes to small pieces, add to a saucepan, season with salt & pepper and boil on medium heat until soft. Drain, add chives, and mash until smooth and creamy. Cover and put to the side.
Salmon: -
Preheat the oven to 215 °C, and generously spray a shallow baking pan with non-stick spray.
Combine the soy sauce, honey, garlic and ginger in a small bowl.
Cut the salmon into 4 serving size pieces and arrange on the prepared pan in a single layer.
Spoon a little of the soy sauce mixture onto each piece of salmon and rub it in with the back of the spoon.
Turn the pieces over, and using the rest of the mixture, coat the other side of the salmon.
Bake for 8-10 mins until salmon reaches the desired doneness -
Serve over mashed potatoes and garnish with coriander & thin strips of pepper.
