Gingerbread Self Saucing Pudding (Te Taro Kanekane Pudding)

Te Taro Kanekane Pudding, another delightful pudding dish.

Ingredients: -
1 cup plain flour,
1 teaspoon baking powder,
1 Tablespoon ground ginger,
2 teaspoon cinnamon,
½ teaspoon mixed spice,
¼ teaspoon nutmeg,
80g butter,
3 Tablespoon golden syrup, 60g,
½ cup brown sugar,
½ cup milk,
To Serve – Whipped cream,
Sauce: -
1 Tablespoon ground ginger,
½ cup brown sugar,
2 cups boiling water,
¼ cup golden syrup, 
1 teaspoon cornflour mixed with 2 Tablespoons cold water,
METHOD:-
Preheat oven to 180°C fan bake.
Sift dry ingredients into a bowl.
Melt the butter, golden syrup and brown sugar, all together.
Add milk, butter and mix into the flour and whisk into a smooth batter. Pour into a baking dish.
Using the same bowl whisk all the sauce ingredients together.
Pour the sauce mix gently over the batter so that it sits on top and doesn’t mix into each other.
Bake for approx 50 mins or until a skewer comes out of the cake part clean.
Dust the top with icing sugar and serve warm with a lashing of whipped cream
