Ingredients: -
4 -100g salmon fillets
3 tsp fresh ginger, finely grated
2 Tbsp maple syrup
4 Tbsp olive oil
2 Tbsp lemon juice
1 cup of rocket leaves
1 cup shredded green pepper
1 cup shredded cucumber
3 spring onions, thinly sliced
1 carrot, finely shredded
METHOD: -
Preheat oven to 200°C. Place salmon in a small ovenproof dish. Rub with ginger, season with freshly ground black pepper and drizzle with maple syrup. Bake for 12-14 mins or until salmon is cooked.
Meanwhile, whisk oil and lemon juice in a large bowl until combined. Add rocket, green pepper, cucumber, spring onions and carrot. Toss gently to combine.
Serve salmon on a bed of salad coleslaw.
