Ingredients: -
Side of salmon
Honey, butter & garlic for the glaze
Sour cream, dill, lemon and onion for the sauce
Cranberries, almonds, parsley, pomegranate, olive oil and orange juice for the tapenade
METHOD: -
Mix the 3 glaze ingredients in saucepan and simmer, then pour glaze over salmon already in baking tray.
Bake salmon in foil for 15 minutes covered, then grill for 10 minutes.
Immediately transfer to plate and allow to cool while you mix sauce ingredients to a thick paste and slather on cooled salmon.
Soak Cranberries in orange juice then mix with other tapenade ingredients. Pile this on top of the thick sauce -
