Ingredients:-
5 chicken drumsticks
Salt and ground black pepper, to taste
2 Tbsp butter
4 carrots, peeled and cut diagonally into 1" thick slices
1 ½ cups halved mushrooms
1 sliced onion
1/2 cup cooking white wine
2/3 cup chicken broth
1 bay leaf
2 fresh thyme sprigs
6 quartered potatoes
1 tsp salt
1/4 tsp ground black pepper
METHOD:-
Season chicken with salt and black pepper.
Heat butter in a pan over medium high heat.
Add chicken and brown, turning occasionally, about 10 mins.
Remove chicken from pan.
Add mushrooms, carrots and onions. Cook 10 mins.
Add wine and boil over high heat about 3 mins.
Add chicken broth, bay leaf, thyme, potatoes, salt, black pepper and chicken. Simmer, covered for 30 mins or until chicken is at an internal temperature of 88 °C, and potatoes are tender.
Remove, bay leaf and thyme sprigs.
