Easter Fun Cookies

Ingredients:
225g unsalted butter, softened
200g sugar
1 large egg
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp ground cinnamon (optional)
Coloured icing and sprinkles for decorating
METHOD:
Preheat your oven to 175°C. Grease baking trays and line with baking paper.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon (optional).
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If the dough is too soft, refrigerate for about 30 mins.
Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Use Easter-themed cookie cutters to cut out shapes like bunnies, eggs, chicks, flowers etc.
Place the biscuits on the prepared baking trays and bake for 8-10 mins, or until the edges are lightly golden. Allow the biscuits to cool on the baking sheets for a few mins before transferring to a wire rack to cool completely.
Make it fun for the kids & grandchildren and get decorating the cooled biscuits with coloured icing and sprinkles. Get creative kids!!
