Easter Flame Grilled Chicken on a Bed of Rice & Vegetables

'Enjoying Easter with You’

Ingredients:
2 Chicken Breasts
2 Tbsp Olive Oil
1 tsp garlic powder
1 tsp paprika
Salt & Pepper, to taste
1 cup rice
2 carrots, sliced
1 head of broccoli, cut into florets
1 Tbsp butter
1 Tbsp lemon juice, optional
METHOD:
Marinate the Chicken:
In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
Coat the chicken breasts with the marinade and let them sit for at least 30 mins.
Rinse the rice under cold water. In a pot, bring 2 cups of water to the boil.
Add the rice, reduce the heat, cover, and simmer for about 15-20 mins until the rice is cooked.
Prepare the Vegetables:
Steam the carrots and broccoli until tender, approx 5-7 mins.
You can also sauté them in a pan with a bit of butter for extra flavour.
Grill the Chicken:
Preheat your grill to medium-high heat.
Grill the chicken breasts for about 6-7 mins on each side, or until fully cooked and charred to your liking.
Squeeze some lemon juice over the chicken for added zest. (If using lemon).
Place a serving of rice on each plate and arrange the steamed or sautéed carrots and broccoli around the rice.
Top with the flame-grilled chicken breasts.
