Ingredients:
750 g Frozen or fresh berries (can have a mix of other fruit if desired)
1 pkt Raspberry jelly
1 pkt Blackberry jelly
600 ml custard (can use ready-made) or make your own
1 large sponge cake, cut into squares
400 g whipped cream
200 g fresh raspberries (can have a mix of other fruit if desired)
METHOD:
Arrange half the berry fruit in two shallow dishes. Make up the two pkt’s of jelly using half the amount of boiling water on pkt instructions. Pour over the fruit and allow to set.
In a glass dish, layer the custard, berries, sponge cake and jelly finishing with custard.
Top with whipped cream and garnish with raspberries.
