Ingredients: -
750g boneless skinless chicken breasts (approx 3 breasts),
½ cup flour seasoned with salt & pepper,
1 egg,
1 Tbsp water,
1 cup cornflakes,
1 cup fresh breadcrumbs (approx 2 slices of bread),
½ tsp curry powder (optional),
1-2 Tbsp oil -
METHOD: -
Preheat the oven to 200C degrees and line a baking tray with baking paper.
Cut each chicken breast lengthways into 2 or 3 even sized strips,
Put the seasoned flour into one bowl,
Beat the egg and water in a second bowl,
Measure the cornflakes into a third bowl, lightly crush them with your hands,
Add the breadcrumbs and curry powder (optional) to the cornflakes and mix together.
Coat the chicken pieces evenly in the flour, coat in the egg, and finally coat with cornflake mixture.
Place the coated chicken pieces on the lined baking tray.
Drizzle lightly with oil.
Bake for 12-15 mins or until golden brown and the thickest part is no longer pink when you cut through -
Serve with salad and a bowl of sour-cream.
