Ingredients: -
½ pkt orzo pasta
1 pkt cranberries
1 pkt toasted hazelnuts, skins removed and chopped
4 spring onions, thinly sliced
1 punnet cherry tomatoes
2 capsicums, diced small
Mint and parsley to taste
Dressing: -
Combine the following: -
100ml oil
50ml red wine vinegar
1T mustard seeds
Salt and pepper
1½ Tbsp sugar
Chill in the fridge
METHOD: -
Cook the pasta in salted water with a swig of oil. Drain under cold-water. Place all the ingredients in a bowl and stir through the dressing.
This recipe has been on our Christmas table every year since my son was born, he is now 22.
