Ingredients: -
2 cups cooked chicken, shredded
2/3 cup mayonnaise
2 Tbsp fresh parsley, chopped
1/4 cup red onion finely diced
1/2 cup green or red grapes, slice into halves
1/2 cup celery, diced
1/4 cup walnuts, chopped
1/2 tsp salt, more if needed
1/4 tsp black pepper, more if needed
METHOD: -
In a large bowl, mix together the mayonnaise, salt, black pepper and fresh chopped parsley.
Add the shredded chicken, halved grapes, diced celery, chopped walnuts and diced red onion. Stir well to combine.
Will compliment on top of a large green salad, or serve with toasted sandwiches, or on wraps or lettuce wraps.
