(Makes 3-4 individual salads)
Ingredients: -
3 slices bread,
1 stick celery, finely chopped,
½ cup cheese, your favourite,
1 small onion, finely chopped,
1 small cucumber, chopped finely (optional),
2 cups cooked roast chicken,
½ green lettuce, chopped roughly,
2-3 Tbsp olive oil,
METHOD: -
Toast the bread, then brush with olive oil. Chop into chunky croutons.
in a bowl place the lettuce, onion, celery, and cucumber (optional). Place 4 plates on the bench, layer with the lettuce into a large bowl and scatter over the chicken, celery, onions, and cucumber in layers.
Serve fresh or chilled with your favourite mayo.
