
Ingredients:
1 large head of cauliflower, cut into florets
1/4 cup unsalted butter
3 tablespoons all-purpose flour
2 cups whole milk
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
METHOD:
Preheat your oven to 190°C.
Bring a large pot of water to a boil. Add a generous pinch of salt and the cauliflower florets. Cook until tender but still slightly firm, about 5-6 minutes. Drain and set aside.
In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 2-3 minutes until the mixture is nutty smelling.
Slowly add the milk to the pan, whisking continuously. Add the garlic powder, onion powder, salt, and pepper. Cook until slightly thickened and simmering.
Add the cheddar cheese and whisk until melted into the sauce. Turn off the heat.
Add the drained cauliflower to the cheese sauce and stir to coat completely.
Transfer the cauliflower mixture to a 9-inch square baking dish. Top with the Parmesan cheese and panko breadcrumbs.
Bake in the preheated oven for 25-30 minutes, until the cauliflower is tender and the top is slightly browned.
