Ingredients:
Leftover Meat from last night’s meal (slice, dice or mash)
Leftover potatoes, peas, kumara, pumpkin, carrots, any veges leftover (slice and dice)
2 medium onions (chop up finely)
50 g butter (more if desired) or if preferred cooking oil
Salt & Pepper to taste
Parsley to serve
You can add anything else you desire
Method:
Heat a large frying pan on the oven top to a medium heat. Add the butter and the onion and fry until light brown, then add the meat and the leftover vegetables, potato, peas and all the veges.
Cook on medium heat for around 10 minutes, allowing the butter to soak into the onion, meat and veges so they are browned and sizzling
Sprinkle with parsley and serve hot with fried eggs (optional) and toast.
