Ingredients:-
250g Streaky Bacon (chopped),
6 eggs,
1 Egg (lightly beaten),
Pinch of Salt,
2 Sheets Pre-Rolled Flaky Puff Pastry,
Freshly Ground Black Pepper,
2 Tbsp chopped Parsley,
1 tsp Chopped Chives.
METHOD:-
Preheat Oven to 175ºC fan bake.
Fry the Bacon lightly and leave to cool. Roll the first sheet of pastry to fit an enamel pie dish, roll pastry enough so it goes up the sides of the dish. Roll the second sheet of pastry to make a lid for over the pie. Leave it to the side.
Scatter around 2/3 of the bacon over the base of the pie, then scatter half the chopped parsley and chives over the base.
Break eggs over the top of the bacon, parsley and chives.
Season with freshly ground black pepper, then add the rest of the parsley and chives, add remaining bacon, avoid breaking the egg yolks.
Cover with the second pastry sheet, pinching the edges with your fingers.
Brush with the lightly beaten egg and pinch of salt to glaze the pie, then make three slits in the pastry for steam to escape.
Place in pre-heated oven bake for 30-35 minutes or until golden brown.
