Amazing Christmas Turkey With Apple & Apricot Stuffing

Ingredients: - 
4.8 kg whole turkey
50 g softened butter - 
Prepare stuffing ingredients: - 
5 cups of bread (cubed)
5 cups of whole meal bread (cubed)
1 Tbsp butter
2 celery stalks (chopped)
1 large onion (chopped)
2 small apples (chopped)
1 cup dried apricots (chopped)
½ cup fresh parsley (minced)
1 cup chicken broth
1/3 cup melted butter 

METHOD: - 
In a pan, heat butter over medium-high heat. Add celery and onion; cook and stir until tender. Add apples, apricots, parsley, and bread cubes. Stir in broth and melted butter. 
Preheat oven to 160°C fan bake. Remove and discard neck from turkey. Rinse turkey (including cavity) under cold water. Pat dry inside and out with paper towel. Loosely fill neck cavity with stuffing. Using toothpicks, secure skin over neck cavity to enclose stuffing. Loosely fill large cavity with remaining stuffing. Secure skin over cavity with toothpicks. Tie legs together with kitchen string. Tuck wings under turkey.
Place turkey on a greased wire rack in a large roasting pan. Pour 1 1/2 cups cold water into pan. Rub turkey all over with butter. Season with salt and pepper. Cover pan tightly with greased foil. Roast for 2 hours. Remove foil. Roast for 1 hour 20 mins, basting with pan juices after 1 hour, or until browned and juices run clear when thigh is pierced with a skewer. Cover loosely with foil. Stand for 10 mins.
Place turkey on a serving platter and garnish with small red berries and Xmas decorations and place turkey on your Christmas table.
