Yummy Cream Cheese, Almond and Apricot Ball
Ingredients:
250g Cream Cheese
½ cup Dried apricots, roughly chop
¾ cup Almonds, roughly chop
3 sprigs Fresh parsley, finely chop
METHOD:
Combine Cream Cheese, apricots, parsley and ½ of the almonds in a bowl. Mix well to make sure the apricots, parsley and almonds are evenly distributed. Roll into a ball. Cover the ball with the remaining almonds until it's fully covered.
Wrap the ball in glad wrap and refrigerate for 30 mins so it's nice and firm for serving.
