Ingredients:
½ pumpkin, peeled and sliced into chunky cubes,
3-4 large potatoes, peeled and cut into pieces,
6 brussels sprouts, washed and halved,
1 cup green beans, fresh or frozen,
½ cup of olive oil, you made need more,
Salt & pepper, to taste,
METHOD:
In a bowl, pour enough of the olive oil in to toss the pumpkin and potato
pieces, season with salt and pepper to taste and toss the pumpkin and potato so it has a good coating of oil.
Place the pumpkin & potatoes into a baking dish with baking paper on the bottom, place in oven 180 C for approx 1 hour or until they are browned.
While the pumpkin & potatoes are roasting, place the remainder oil into a pan and sauté the seasoned brussels sprouts and green beans.
When the pumpkin and potatoes have finished roasting, place in a serving platter and mix in the sauteed brussels sprouts and green beans. Serve hot with your favourite meat, fish etc, and gravy.
