Scrambled Eggs with Mushrooms & Cherry Tomatoes

Ingredients: - 
8 button mushrooms
2 eggs
2 egg whites
4 Tbsp skim milk
2 Tbsp. chives, finely chopped
2 Tbsp. low fat grated cheese
Sprinkle of garlic powder
6 cherry tomatoes
Olive oil spray
Salt & pepper, to taste
2 thick slices of whole meal bread
Butter for toast  
METHOD: - 
Heat a non-stick fry pan on med heat.
Spray mushrooms with olive oil, on the inside sprinkle with garlic powder and grill both sides approx 8-10 mins, or until golden brown. Set aside.
Spray olive oil into saucepan. Whisk eggs and milk very lightly in a bowl and add salt and pepper. Heat frypan over low heat and pour in egg mixture.
Stir over low heat. When the egg mixture is still quite runny remove from heat, add cheese and continue to stir for 1-2 mins. Toast the whole meal bread and butter. Place scrambled eggs on the toast and serve with the mushrooms and cherry tomatoes, garnish with chives and serve immediately.
