Ingredients:
3 large golden sweet potato, chopped evenly into bite-size chunks
1 Tbsp cajun seasoning (optional)
1 Tbsp avocado or olive oil
1 tsp sea salt
1/4 cup (75 g) whole-egg mayonnaise
1 Tbsp lime juice
1/3 cup (80 ml) buttermilk
1/4 cup finely chopped coriander
4 ozs baby spinach, chopped
1/2 cup red onion, chopped very small
1/3 cup dried cranberries
1 avocado, chopped in chunks
Ground black pepper, to taste
Method:
Preheat oven to 200°C. Line a baking tray with baking paper. Combine sweet potato, oil and Cajun seasoning in a large bowl, mix until spice is covering the sweet potato. Arrange on lined tray. Bake, turning occasionally, for 30 mins or until sweet potato is tender.
Place the buttermilk, mayonnaise, lime juice and chopped coriander in a small bowl and stir to combine. Season.
Place sweet potato, spinach, avocado, onion, dried cranberries in a large bowl. Drizzle with the buttermilk dressing and gently toss to combine. Season with salt and ground black pepper to taste.
Transfer to a serving platter. Can be eaten warm or cooled.
