Ingredients:
2 cups rhubarb, chopped small
2 cups peaches, peeled and diced
1 cup sugar
1 Tbsp lemon juice
1 cup flour
1 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1/2 cup butter, melted
1 cup milk
1 tsp vanilla extract
METHOD:
Preheat your oven to 175°C. Grease a 9 x 13-inch (22.8 x 33.02 cm) baking dish.
In a bowl, mix the rhubarb, peaches, 1 cup of sugar, and lemon juice. Pour into the prepared baking dish.
In another bowl, mix the flour, 1 cup of sugar, baking powder, and salt. Stir in the melted butter, milk, and vanilla until just combined.
Pour the batter over the fruit mixture in the baking dish.
Bake for 45-50 mins, or until the top is golden brown and the fruit is bubbly.
Serve hot with ice-cream.
