Ingredients: -
6 bacon rashers - rind removed - finely chopped,
300g short crust pastry,
1 onion - finely chopped,
100g Gruyère cheese grated,
3 eggs,
150 ml milk,
150 ml single cream,
1 pinch salt and freshly ground black pepper,
Nutmeg, grated,
METHOD: -
Line the flan dish base and sides with the pastry. Trim excess.
Heat oil in a frying pan over medium-high heat. Add onion and bacon. Cook for 3 minutes. Drain on paper towels. Cool.
Place the bacon and grated gruyere onto the pastry base. Mix together the seasoned milk, eggs, cream and grated nutmeg with an electric whisk. Pour into the pastry dish.
Bake at 220°C for 35-40 minutes until quiche is golden, puffed and a knife inserted in centre comes out clean.
