Pork Bones & Puha Boil Up (Ko nga Iwi poaka me te Puha ka koropupu)

Boil up is a traditional Maori food from Aotearoa NZ. It is a broth/soup made from meat, bones, greens and starchy vegetables boiled together in a pot.
Ingredients: -
2 kgs of Pork Bones,
2 tsp Salt for the pot,
3 Bay leaves, 
1 kg Puha or Watercress – Clean & remove bad leaves, long stalks, and rinse thoroughly.
2 Carrots, slice chunky, 
¼ Pumpkin, slice chunky,
2 Kumara, slice chunky,
4 small Potatoes,
(You can use any veges you desire),
1 tsp salt,
METHOD:-
Put the pork bones and bay leaves in a large pot and cover them in cold water. Add the salt and bring to the boil with pot lid off.
Still with pot lid off, simmer very gently for an hour or so until the meat is falling off the bone.
Add puha to the pot. With pot lid on, simmer very gently for about 8-10 mins. Turn element off and allow puha to steam in the pot with the lid on for 5-10 mins or until cooked.
Before serving, gently turn puha over in the stock.
In another pot, gently boil the vegetables with a tsp of salt until soft, then add to the pork bones & puha.
Season to taste. 

Serve with rewena bread or fried bread.
