Ingredients:-
The Crust:-
2 cups plain biscuit crumbs,
2 tsp sugar,
pinch of salt,
90 ml melted butter,
The Filling:-
460 g cream cheese,
1 cup icing sugar,
1 tsp vanilla,
480 ml cream,
½ tsp vanilla extract,
1 Tbsp icing sugar,
Topping:-
2 cups strawberries,
1 cup of fresh blueberries,
1 cup fresh raspberries,
Makes a yummy triple berry cheesecake,
METHOD:-
In a large bowl, combine cracker crumbs, sugar, salt. Whisk to combine. Add melted butter and whisk until damp and clumps together. If it’s too dry add more melted butter in 1 Tbsp lots until the right consistency.
Pour crumbs into a 23cm cheesecake pan, pressing crumbs into the pan and working up the sides, pressing until a 2-inch crust is formed.
Bake at 190 C° for 6-7 min until golden brown. Set aside to cool.
Then beat together the cream cheese and 1 cup of icing sugar until combined. Add 1 tsp of vanilla and beat until combined. Remove the mixture and place in a large bowl.
Then add the cream, ½ teaspoon of vanilla, and 1 Tbsp of icing sugar into a bowl or an electric mixer. Whip cream mixture on high until stiff peaks form. Add cream cheese mixture, to whipped cream and whisk until combined.
Pour mixture into cooled crust and smooth with a spatula. Cover with foil. Place in the fridge for at least 2 hours to set. But overnight is better. It will be firmer and more like a cheesecake consistency.
Then decorate with fresh berries, just before serving. Slice into wedges and serve.
