Nacho’s Delight

Ingredients: - 
500g beef mince
1 Tbsp oil
1 clove garlic, minced
1 onion, finely diced
1 tsp taco seasoning
1 bag corn chips
1 cup grated tasty cheese
1 lemon
1 pinch salt
1 chili
2 tomatoes, diced
1 cup coriander, roughly chopped
1 Tbsp Sour Cream 
METHOD: - 
Preheat oven to 200°C.
Heat oil in a medium fry pan. Add garlic and half of the onion, cook for 2 mins or until soft. Add mince and taco seasoning, stirring with a wooden spoon for 5 mins or until browned. Season with salt and pepper.
Place the corn chips into a large baking dish, add the mince mixture and sprinkle over the cheese.
Bake in the oven for 12 mins or until the cheese is melted and golden.
For the salsa, while the nachos are baking, put the remaining half of finely chopped onion into a bowl and squeeze half the lemon on with a pinch of salt – leave to pickle for 5 mins.
Finely chop the red chili and add to onions along with tomatoes and coriander - season with salt and add lemon juice to taste.
Top nachos with salsa and sour cream and serve.
