Ingredients: -
500g beef mince
1 finely chopped onion
1 finely chopped carrot
1 finely chopped celery stalk
1 finely chopped garlic clove
250g button mushrooms, wash, and slice
400g tomatoes, chopped
1 Tbsp tomato paste
2 cups beef stock
4 sprigs of fresh thyme
To Serve: -
Toasted crusty loaf
Cheese to melt over the top of the mince
Garnish of your choice
METHOD: -
Heat a drop of cooking oil in a heavy-based saucepan over a medium to high heat and add the beef mince.
Brown mince, stirring with a wooden spoon to break up the meat, then transfer to a bowl.
Add another drop of oil to the saucepan and add the onion, carrot, celery and garlic and cook until they start to soften, about 5 mins.
Return mince to the saucepan.
Add the mushrooms, tomatoes, tomato paste, stock and thyme.
Bring to the boil, then reduce heat to low, cover and simmer mince for 45 mins.
Stir mince from time to time and taste for seasoning.
Remove lid towards the end of the cooking time if you need to thicken the mince a little.
Put toast onto serving plates and spoon mince over top, add a good-sized knob of cheese on top that will melt and garnish. Serve hot with extra crusty toast!
