Ingredients:-
1 kilo mussels, scrubbed and debearded,
2 cups fish stock or water,
1 cup olive oil,
4 limes, finely grated rind and juice of,
2 Tbsp white wine vinegar,
2 Tbsp chopped chives,
2 garlic cloves, crushed,
1 tsp seeded mustard,
METHOD
Place mussels and stock in a saucepan, cover and bring to the boil. Cook for 2-3 mins, until mussels open.
Remove top shell of each mussel and discard. Arrange mussels on a platter.
Whisk together oil, rind and juice, vinegar, chives, garlic and mustard, then season to taste.
Drizzle over mussels before serving warm or cold. Serve with a side of garlic bread.
