Mango Chutney

Ingredients:
2 ripe mangos, peeled and diced
1/2 cup sugar
1/4 cup apple cider vinegar
1 small onion, finely chopped
1 clove garlic, minced
1 Tbsp grated ginger
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/4 tsp chili flakes (optional)
Salt & Pepper, to taste
1 cup raisins (optional)
METHOD:
In a large saucepan, combine the mangos, raisins, sugar, and apple cider vinegar.
Add the onion, garlic, ginger, mustard seeds, cumin seeds, and chili flakes.
Bring the mixture to a boil over medium heat, stirring occasionally.
Reduce the heat and simmer for about 30 mins, until the chutney thickens, and the mangoes are soft.
Season with salt & pepper to taste.
Allow the chutney to cool before transferring it to a jar or container.
It's perfect as a dip, spread or with your meals.
