Ingredients:-
4 medium potatoes
2-4 Tbsp olive oil for brushing
Salt & pepper to taste
1 cup shredded cheese
1/2 cup bacon bits
1 sliced green onion
Sour cream, and or tomato sauce for serving
METHOD:-
Wash potatoes and cut into wedges. Place the wedges on a microwave safe plate or bowl. Microwave for 10 minutes, or until the wedges are tender.
Line a baking sheet with baking paper or foil. Transfer the wedges to the baking paper and brush each side with olive oil. Sprinkle with salt and pepper. Sprinkle the wedges with the cheese and bacon.
Grill for 5-10 minutes, or until the cheese is melted to your liking.
Top with green onions and serve with sour cream and or tomato sauce.
