Ingredients:-
2 Lamb Racks
2-3 tbs finely chopped fresh herbs rosemary, parsley, oregano
2 slices white bread or ciabatta (preferably old bread)
1 tsp olive oil
Salt and pepper *to taste
1 egg white
METHOD:-
Process the bread in a food processor to make fresh breadcrumbs.
Mix breadcrumbs, herbs, olive oil, salt, and pepper to make the herby crumb.
Bake at 200°C for 12-15 minutes then finish slowly under the grill until brown. (Cook to your liking)
Rest the lamb rack for 5 minutes before serving.
Serve with your favourite gravy, new potatoes, and carrots. Alternatively, it is nice served on a bed of potato mash.
