Kamokamo, also known as Kumikumi, is commonly used in Maori cuisine. Maori have made pickle from the Kamokamo forever and it is a delicious condiment for their meats and breads.
Ingredients: -
4 cups of chopped kamokamo,
4 cups of chopped cauliflower,
4 onions, diced,
3 cups of white vinegar,
4-5 cups of sugar,
1 Tbsp curry powder,
2 Tbsp mustard powder,
1 Tbsp turmeric powder,
Jars for bottling,
METHOD:-
In a pot bring to the boil in 3 cups of white vinegar the kamokamo, cauliflower, onions and cook for about half an hour or until vegetables are just tender,
In a bowl mix together 4-5 cups sugar, 1 Tbsp curry powder, 2 Tbsp mustard powder, 1 Tbsp turmeric powder and half a cup of flour, mix well.
Add to the vegetable mixture and stir until dissolved and simmer for about 5 mins. Jar as normal, remember you can add corn etc when making this pickle.
