Ingredients: -
Fruit:-
Punnet of strawberries, whole or cut in half
2 large kiwifruit, sliced
1 Pineapple, skin cut off and cut into chunks
Add any other fruit you want; cubes of watermelon are yummy if affordable
Ice- Cream: -
1 ¾ cups cream
1 ¼ cups milk, preferably whole milk
¾ cup sugar
⅛ tsp fine sea salt
1 Tbsp vanilla extract
METHOD: -
Fruit: -
Cut strawberries in half or keep whole, peel and slice kiwifruit, cut pineapple into chunks. Put into a large glass bowl and refrigerate -
Ice-Cream: -
Add in 1 cup of the cream, sugar, and salt into a saucepan. Stir over medium heat until the sugar dissolves completely. (Texture will be nice and smooth!) Don't let it come to a boil.
Remove from heat and add in the remaining cream, milk, and vanilla extract.
Stir to combine and chill in the refrigerator until cooled and ready to churn. Or in the freezer to help it cool quicker, but don't leave it in there too long! or it will grow ice crystals.
Remove from the fridge and whisk again. Pour into an ice cream maker, and churn according to manufacturer's instructions.
Once the ice cream is set, add it to an airtight container and store in the freezer until you're ready to use it.
Take your chilled fruit salad from the fridge and place into dessert glasses, add a couple of scoops of your homemade ice-cream. You can add your favourite toppings. Enjoy!
