
''Loving the Easter' Vibes'
Ingredients:
1 boneless pork roast, approx 1.4kg to 1.8kg
2 Tbsp fresh thyme leaves
2 Tbsp fresh basil leaves, chopped
4 cloves garlic, minced
2 Tbsp olive oil
Salt and pepper, to taste
METHOD:
Preheat your oven to 190°C.
Prepare the herb mixture: In a small bowl, combine the thyme, basil, garlic, olive oil, salt, and pepper.
Season the pork roast: Rub the herb mixture all over the pork roast, make sure it's evenly coated.
Roast the pork: Place the pork roast on a rack in a roasting pan. Roast in the pre-heated oven for about 1.5 to 2 hours, or until the internal temp reaches 63°C.
Rest and serve: Let the pork roast rest for about 10 mins before slicing. The meat will be tender and tastier.
Serve with roast potatoes and gravy.
