''Loving the Easter' Vibes'
Ingredients:
1 boneless pork roast, approx 1.4kg to 1.8kg
2 Tbsp fresh thyme leaves
2 Tbsp fresh basil leaves, chopped
4 cloves garlic, minced
2 Tbsp olive oil
Salt and pepper, to taste
METHOD:
Preheat your oven to 190°C.
Prepare the herb mixture: In a small bowl, combine the thyme, basil, garlic, olive oil, salt, and pepper.
Rub the herb mixture all over the pork roast, make sure it's evenly coated.
Place the pork roast on a rack in a roasting pan. Roast in the pre-heated oven for about 1.5 to 2 hours, or until the internal temp reaches 63°C.
Rest and serve: Let the pork roast rest for about 10 mins before slicing. The meat will be tender and tastier.
Serve with roast potatoes and gravy.
