Ingredients: -
170g pork sausage,
6 large eggs,
1/3 cup of milk,
½ tsp dried parsley flakes,
¼ tsp salt,
1 Tbsp butter,
1 ½ cups frozen, cubed hash brown potatoes (thaw),
¼ cup chopped onion,
1 cup shredded cheese,
1/2 cup cooked, shredded bacon, pre-cook,
1 small bunch chives, minced,
6 cherry tomatoes, halved
METHOD: -
Whisk the eggs, milk, parsley and salt; set aside. In a 23cm heavy frypan, cook sausage over medium heat until no longer pink, remove and drain. In the same pan, heat butter over medium heat. Add potatoes and onion; cook and stir until tender, 5-7 mins. Return sausage to pan. Add egg mixture, cook and stir until almost set. Sprinkle with cheese. Cover and cook until cheese is melted, 1-2 mins. If desired, top with bacon, chives, and cherry tomatoes.
Serve with a cup of tea and toast.
