Easter Roasted Leg of Lamb

"Sharing Easter with Family & Friends'

Ingredients:
1 leg of lamb (approx 2 kg)
4 cloves garlic, sliced
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 Tbsp olive oil
Salt and pepper to taste
1 lemon, zested and juiced
1 cup chicken or vegetable broth
METHOD:
Preheat oven to 180°C.
Prepare the lamb: Make small incisions all over the lamb and insert the garlic slices and rosemary sprigs into the cuts.
Season the lamb: Rub the lamb with olive oil, then season generously with salt, pepper, lemon zest, and thyme.
Roast the lamb: Place the lamb in a roasting pan and pour the lemon juice and broth around it. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal oven temp reaches 60°C, for medium-rare.
Rest the lamb: Remove the lamb from the oven and let it rest for 15-20 mins before carving.
Serve with roast carrots, potatoes and lashings of gravy.
