
‘A Crisp & Refreshing Easter Salad’
Ingredients:
1 orange rock melon, cubed
1 green honey dew melon, cubed
1/4 cup fresh mint leaves, chopped
1/4 cup fresh basil leaves, chopped
Juice of 1 lime
2 Tbsp honey
Pinch of salt
METHOD:
Place the cubed melons into a large mixing bowl.
Add the chopped mint and basil leaves to the bowl with the melon cubes.
In a small bowl, whisk together the lime juice, honey and a pinch of salt.
Pour the dressing over the melon and herb mixture. Gently toss to combine, ensuring the melon cubes are evenly coated with the dressing.
Refrigerate the salad for at least 30 mins before serving to allow the flavours to come together. Serve chilled.
